evening with a cold glass of Champagne,
dip a slice of French bread into
creamy baked Brie with delicious
garlic-infused honey and walnut
sauce, and you’ll begin the French
and the style at the beach. At certain
times of the year you can literally
walk along the and pick Mussels off
the rocks. Mussels Provencal Style
is easy and impressive. Heat one
tablespoon of olive oil in a large sauce
pan add chopped onions,celery,garlic,
basil and a bay leaf.Cook over low
heat for about 5 minutes, until
softened but not browned. Mix in
1 tablespoon of tomatoe paste, one
14 oz can of diced tomatoes (or
you can use fresh plum tomatoes
peeled and chopped). Add sea salt,
pepper, sugar (1 tsp), l/2 cup of dry
white wine, simmer gently for 30
minutes. Put 2 and l/2 lbs. of
washed Mussels in a pot with l/2
cup of dry white wine, pour over
and bring to boil over high heat.
